Sweet Red Peppers Salad with Feta Cheese

Ingredients

• 8 red peppers
• 100 gr feta cheese
• 1-2 cloves of garlic
• 1/4 cup olive oil
• Vinegar
• Finely chopped parsley, just a little
• Salt

Preparation

Wash peppers and place them in a baking pan which is covered with aluminum foil.

Bake in high temperature until they begin to turn black.

Place peppers in a plastic bag, before they cool. Close the bag and let peppers to cool.

Once they cool, remove skin, stalk and seeds and cut into pieces.

Put them in a bowl and add salt, olive oil and vinegar as much as you like and mix.

Add feta, garlic and parsley, one last stirring and it is ready.
