Lemon curd
Ingredients
- Zest from 3 lemons
- ¾ cup fresh lemon juice
- 1 ¼ cup sugar
- 5 eggs
- ¾ cup butter (170 gr)
- A pinch of salt
Preparation
Zest the lemons and then squeeze them to take the juice out.
In a saucepan pour the lemon zest and juice, the sugar and a pinch of salt. Mix well. Beat the eggs and pour them in the saucepan.
If you want it to be sweeter add some more sugar. I don’t prefer it because I usually mix the lemon curd with whipped cream.
Place the saucepan on the burner and turn to medium heat. Stir for 15 minutes. Remove from heat and add the butter. Stir until it melts.
Pour the curd through a fine-mesh strainer to remove the zest and any partially cooked egg. Let the curd cool down and store it in the fridge.
Mix the lemon curd with whipped cream to make a refreshing lemon mousse!
