Fluffy cheese pies

Fluffy cheese pies! These pies are so fluffy, they literally melt in your mouth! You can put whatever filling you like. I used feta cheese, mozzarella and sausage. They are quick and easy and you will enjoy them on every occasion!

Preparation

Put the egg white, oil, vinegar, yoghurt and salt in a bowl and mix them until they are homogeneous.

Add the butter in pieces and mix them into the mixture. The small pieces that will remain do not bother us because they will be integrated along the way.

Add the cornflour and baking powder and mix again.

Add the flour gradually until the dough pulls away from the walls and is soft. When this happens, stop adding flour. However, you’ll most likely need all 400g of the flour.

Divide the dough into 15 balls. Press the ball with your palms to open it.

Add the filling of your choice.

Close the cheese pie, turn it so that the joint is on the bottom and place it in a pan covered with parchment paper. Continue until you place them all. Then cut the surface.

Mix the reserved yolk with 1 tablespoon of water.

Brush the surface with the yolk. You can leave them like this or add sesame seeds, depending on whether it goes well with the filling.

Bake in a preheated oven at 170C for about 20-25 minutes, depending on the oven.

  • 120 g yogurt (3 Tbsp)
  • 10 ml vinegar (1 Tbsp)
  • 60 g cornmeal
  • 1 tsp salt
  • 10 g baking powder
  • 400 g flour
  • Sesame, optionally
