Strawberry ice cream, a flavour of your childhood memories

I think it’s time for ice cream. And what’s better than strawberry flavour! One of the most favourite fruits of all ages. Our childhood memories are full of pink ice scoops melting on the cone, running on our fingers and dripping down our clothes as we tried in vain to eat it before it melted…

This homemade ice cream, full of spring freshness, is super easy to make and even easier to eat. It’s an excellent marriage between the fruity flavour of strawberry and the vanilla scent of the fluffy cream. Enjoy it on the sweet days of spring and the hot days of summer …
Ingredients
- 3 cups mashed strawberries
- 1 tbsp lemon juice
- 500 ml heavy cream 35% fat
- 1 condensed milk (400 g)
- 1 tsp vanilla
All the ingredients must be cold from the fridge
Preparation

Wash the strawberries and cut their stalk. Mash them in the food processor, add the lemon juice and leave them aside.

Beat the heavy cream in the mixer until it gets thick. Add the milk gradually until it incorporates into the whipped cream and turns into a fluffy cream. Add the vanilla and the strawberry pulp and mix gently until the mixture is homogeneous.
Pour the mixture into a container, preferably a metal one, cover it well with cling film or its lid, if available, and put it in the freezer until it freezes well.
