Black forest cheesecake cupcakes
The truth is that I am not very fond of sweets but there are flavours that I can’t resist. Chocolate first and foremost and then anything sweet and sour. Now imagine a dessert that combines the above at the same time. And what a dessert! Cheesecake, my sweet spot!
These amazing treats look like cupcakes but in reality, they are not. They are individual cheesecakes consisting of a crunchy base of Oreo cookies, a rich, velvety layer of chocolate cream cheesecake, soft and fluffy whipped cream and a beautiful, aromatic, sweet and sour cherry sauce.
So imagine tasting the crunchy cookie at the same time with the soft, chocolate layer along with the rich cherry syrup all together in a spoon. Colours, aromas and textures, with harmonious contrasts, conspire for a treat that has a unique purpose, to seduce you!
Ingredients
For the base
- 12 Oreo cookies
- 1,5 tbsp butter (25 g)
For the cream
- 150 g couverture 55%
- 2/3 cup powdered sugar (150 g)
- 2 tbsp cocoa
- 300 g cream cheese
- 2 eggs
- Vanilla extract
- 1/2 cup heavy cream
- A little salt
Also
- 1 whipping cream 35% fat with 2.5 tbsp powdered sugar to make whipped cream
- Half a dose of “Cherry sauce, quick and easy” (the quantity is optional, depending on how many cherries you want to put on top)
- Chocolate peels for garnish
Preparation
Grind the cookies in the food processor until like powder. Melt the butter. In a bowl, mix the ground cookies with the butter.
Divide the mixture into paper cupcake cases, about 1 tablespoon in each.
With the bottom of a glass, press the mixture well to get solid. Bake in a preheated oven at 180 C for 5 minutes. Take them out and let them cool. Meanwhile, melt the chocolate in a baking pan and let it cool a bit.
In a bowl mix the sugar, cocoa, vanilla and salt.
- Beat the cream cheese in the mixer until fluffy. Continue beating and add the eggs one by one.
- Pour the melted chocolate and stir.
- Tip in the sugar and cocoa mixture and stir until incorporated.
- Finally, add the heavy cream and stir well until all the ingredients are incorporated.
Distribute the cream in the cases with the baked oreo base. It is good to beat the bowl of the mixer a few times to let the air go and let the cream sit for a while so that it all fits. To be honest, I don’t always do this because my girls wait with a spoon in their hand for excess cream to be eaten because even before baking this cream is delicious, like mousse. Bake in a preheated oven at 180 ° C for 17-20 minutes.
Once you take it out of the oven, let it cool down and put it in the fridge for 2 hours. Then garnish with whipped cream, cherry sauce and chocolate peels.
