Black Forest Cheesecake Cupcakes

The truth is that I’m not much of a dessert lover. However, there are a few flavors I simply can’t resist. Chocolate comes first, followed by anything that combines sweet and tangy notes. 🛒Ingredients

For the crust
- 🍪 12 Oreo cookies
- 🧈 1½ tbsp butter (25 g)
For the filling
- 🍫 150 g dark chocolate (55% cocoa)
- 🍬 150 g powdered sugar
- 🍫 2 tbsp cocoa powder
- 🥣 300 g cream cheese
- 🥚 2 eggs
- 🌼 1 tsp vanilla extract
- 🥛 1/2 cup heavy cream
- 🧂 a pinch of salt
For the topping
- 🥛 1 cup heavy cream (35% fat)
- 🍬 2½ tbsp powdered sugar
- 🍒 half a batch of the “Quick and Easy Cherry Sauce”
- 🍫 chocolate shavings
👩🍳Preparation

Crush the Oreo cookies into fine crumbs and melt the butter. Mix the cookie crumbs with the melted butter until combined.

Divide the mixture among paper cupcake liners, using about one tablespoon for each, and press it firmly with the bottom of a glass.
Bake in a preheated oven at 180 °C for 5 minutes. Remove from the oven and allow the crusts to cool.
Melt the chocolate over a double boiler and let it cool slightly.

In a bowl, combine the powdered sugar, cocoa powder, vanilla, and salt.
Beat the cream cheese until smooth and fluffy, then add the eggs one at a time. Add the melted chocolate and continue mixing.
Add the sugar and cocoa mixture and mix until fully incorporated. Pour in the heavy cream and mix until smooth.

Divide the filling among the baked crusts. Tap the bowl gently on the counter to release any trapped air bubbles. Bake in a preheated oven at 180 °C for 17–20 minutes.
Allow the cheesecakes to cool completely, then refrigerate for 2 hours.
Whip the heavy cream with the powdered sugar until stiff peaks form. Top each cheesecake with whipped cream, cherry sauce, and chocolate shavings.
