Revani, Greek Semolina Cake with Syrup

Ingredients

For the cake

  • 5 eggs
  • 1 cup sugar
  • 1 cup flour
  • 1 cup coarse semolina
  • 1 cup vegetable oil
  • 1 cup yoghurt
  • 1 tsp baking powder

For the syrup

  • 3 cups water
  • 3 cups sugar
  • Juice of ½ lemon
  • 1 cinnamon stick
  • 2-3 clove sticks

Preparation

For the syrup add syrup ingredients to a saucepan and bring to a boil. Simmer for 5 minutes. Add lemon juice and cool.

Preheat the oven to 180 C. Grease bottom and sides of a 40 cm pan and set aside.

For the cake using a mixer, beat the eggs very well. Add the rest of the ingredients and beat with low heat until combined.

Pour the batter into the pan, level with a spatula and bake at 180 C degrees for 45 minutes or until you have a nice golden color.

While the cake is still warm, cover it with the syrup and let it cool. Revani is also good with vanilla ice cream on the side.
