Chicken with Makalo sauce

Makalo chicken is a Greek traditional dish based on garlic. The Makalo sauce is popular in northern Greek cuisine, in Florina and Kastoria and goes very well with meatballs and chicken. For all you, garlic lovers this is the real thing!
Ingredients
- 1 whole chicken or 4 chicken legs
- 4 Tbsp butter
- 4 Tbsp flour
- 1 lt (4 cups) chicken broth
- 1 Tbsp vinegar
- 1 garlic clove or more, finely minced
- ½ tsp paprika
- 1 tsp pepper flakes
- Salt and pepper
Preparation
Place chicken in a large pot and cover with water. Bring to boil, add salt and let it cook until it’s cooked through. Transfer cooked chicken to a serving platter and keep warm covered with foil. Save 4 cups of the chicken broth.

In a medium saucepan, heat the butter over medium heat until melted. Add the flour and stir until smooth. Cook until the mixture turns a light, golden sandy color.

Add chicken broth to the butter mixture, 1 cup at a time, whisking continuously until very smooth.

Add vinegar, garlic, paprika and season with salt and pepper. Pour sauce over chicken and sprinkle with pepper flakes.
