Chicken Pie with Trahana

Ingredients
For the dough
- 500 gr flour
- 3 Tbsp olive oil
- 1 tsp salt
- 250-300 gr lukewarm water
- ½ cup olive oil for brushing
For the filling
- 2 chicken thighs
- ¼ cup olive oil
- 2 onions
- 200 gr feta cheese
- 1 cup trahana
- Salt and pepper
Trahana is a type of pasta that is made from semolina together with either milk (sweet trahana) or yogurt (sour trahana). It’s dried and then crumbled into tiny little grains that are much like couscous in their appearance. If you need a substitute, you can try couscous or a very small grain pasta.

- 3 cups of the chicken broth
- 3 eggs
Preparation
For the filling
Place the chicken in a deep pan. Pour in 4-5 cups water to cover the chicken. Bring to boil and add some salt. Boil until the chicken is cooked through.
Remove the chicken from the pan reserving 3 cups of the broth and let it cool down for a while. When the chicken is cool enough to handle, remove the skin and bones and chop the meat. Set aside.

Heat the olive oil in a skillet. Add the onions and sauté until soft. Remove from heat and let cool.

In a large bowl mix the onions with chicken.

Add trahana, crumbled feta, salt and pepper. Stir to combine and set aside.
For the dough
Place flour, 3 Tbsp olive oil and salt in a large bowl. Stir to combine. Add lukewarm water, a little at a time. Knead until the dough forms into a ball. Let it rest for half an hour.

Divide the dough in four parts and form into balls. Place one dough ball on a floured surface, sprinkle with flour and push it down with your palm to flatten it. Using a rolling pin start to form a thin pastry. Continue this way until you get a round and thin piece of pastry. You will occasionally need to sprinkle the pastry surface with flour to prevent sticking to the pin and your hands.

Grease a baking dish with olive oil. Place one piece of phyllo in the bottom and brush with oil.

Repeat this with the second phyllo.

Spoon in the filling, smoothing the surface with a spatula.

Add 2 sheets on top, brushing each sheet with oil.

Brush the top layer with oil and use a sharp knife to cut into squares.

Beat the eggs in a bowl with the chicken broth. Pour the mixture over the pie. Wait for a half an hour the pie to absorb most of the broth.

Bake in a preheated oven at 190C until the phyllo is crisp and golden.
