Zucchini Balls “kolokithokeftedes”

Zucchini Balls “kolokithokeftedes”

Greek Zucchini Balls are delicious fried pancakes or fritters served as a vegetarian appetizer with homemade tzatziki sauce. This recipe comes from north Greece, from a village in Drama.

Ingredients

Kasseri cheese is a Greek sheep’s milk cheese with a rubbery texture and a sharp, salty flavor. You can substitute kasseri in this recipe with feta, mozzarella or Provolone.

Preparation

Κολοκυθοκεφτέδες Δράμας

Squeeze the excess water out of the grated zucchini. Once grated you can sprinkle it with sea salt and leave it for half an hour. If you’re short on time- just grate it and squeeze as much as you can.
