Garlic Paste

Small caramelized garlic cloves, filled with the sweetness and rich flavor that garlic develops when roasted, are blended with olive oil to create a wonderful garlic cream free from its well-known strong smell. Smooth, flavorful and aromatic, this garlic cream has none of the harshness or burn of raw garlic.

It is also incredibly practical, as it is always ready to use straight from the jar. It is ideal not only for cooking all kinds of dishes, from vegetable-based meals and meats to minced meat recipes, but also for dressings, sauces, dips and garlic bread.

Just one spoonful is enough to make a remarkable difference! Try it even in tzatziki, where it gives a milder and more pleasant garlic flavor.

Preheat your oven to 180-200°C. Roast the garlic heads for about 1 hour, until the cloves are soft and caramelized.

Let them cool, then gently squeeze the base of each clove and the garlic will slide out easily.

Place the peeled cloves in a food processor with a little olive oil and a small pinch of salt. Blend until smooth and creamy.

Transfer the garlic paste to clean jars, cover the surface with vegetable oil and store in the refrigerator.
